Dr Arcot's research interests lie in assessing the effects of processing on the nutrient quality of foods with particular reference to cereals and
legumes, and in modern methods of nutrient analysis, especially vitamins. Her current research interests are in the field of micronutrient
bioavailability, particularly folic acid.
Dr Arcot also acts as the Postgraduate Liaison Officer in Food Science and Technology.
